Seared Free range pork fillet with lime
Ingredients
- 1 free range pork fillet
- 1 lime
- 50 ml Yellow Spot whiskey
- 1 tbsp butter
Instructions
Get a high heat under your favourite pan, add butter and swirl, introduce the fillet to the pan. Season generously with sea salt and freshly ground pepper. Keep turning and cook until golden brown. The filet is cooked when firm to the touch (please don’t overcook it, much better served pink). Squeeze the lime over the fillet then remove to a wooden chopping board. Arrange slices on a plate. Add the Yellow Spot whiskey back in the pan, watch it bubble, swirl the pan. Add a good knob of butter continue to stir and pour over the fillet.
