Baked Gubbeen cheese with thyme and honey
Ingredients
- 1 baby Gubbeen cheese
- 1 tsp fresh chopped thyme
- 1 tsp local Irish honey
Instructions
Get a ripe (if out of date you're in luck, it will taste even better) baby Gubbeen and unwrap it. Slice it across the equator and open. Sprinkle thyme and honey on the bottom half of the cheese, put the lid back on and wrap it up in the greaseproof paper that it came in. Bake at 180 degrees for 20 min. Check that the cheese is melted in the centre. Unwrap carefully and slide onto a plate, eat with crusty bread.
